You can't seem to change them from the virtual wing window, however you can temporarily open the corresponding playback bar and hold the master you want to change while using the left and right arrows to change the fader set type. Hopefully that makes sense :) And hopefully in the future you'll be able to change it from the virtual wing and eliminate the middle step.
