Check out the Genesis When in Rome DVD that just came out.
The video pieces are excellent during the songs, sound quality is superb, etc. I would have preferred an entire show from the FOH angle. Being a HUGE fan of the band since they formed, I would have done a lot of things differently with cue timings, colors, positions, etc - but it is still very impressive production all around.
the Pink Floyd P.U.L.S.E is the best one for me ever of course. also you can check out all CIRQUE DU SOLEI dvd´s. amazing lighting. great for learning, believe me.
also get CHICAGO the film (the new version) amazing use of color, not a lot of moving light but the use of the colors is very good.
TBH some of the HES podcasts have been great sources of inspiration on programming and design. The podcast of "switching from HOG2 to the new HOG O/S, not only showed me some great designs but also how to copy position parameters from cue to cue, using the new syntax. As for DVDs the new genesis one looks good.
