The "Training Projects" are exactly that - for training.
They cannot be edited, the idea is that you can use them offline with the Demo Play of the same name, to help you practice and learn the console.
For example, start the console using the "Offline" ball at the Welcome Screen, then open the "Demo Concert" play and then the "Demo Concert" training project.
You can also install the Congo software onto your Windows personal computer and do this - the Console Mimic dock is really useful for this.
