Yes you can. The real question is what kind of touchscreen can you use - if your console has any VGA connectors on the back you will need to use a classic touchscreen (meaning no multi touch monitors will work). If the console has any display port (looks a bit like an HDMI connector) on the back, you can use Windows 7 compatible monitors (meaning multi touch).
