New to this!!

The way my lights are hung on a single bar, for example, is 17-28 and 17-28. So if l bring up 17 it lights stage right and center stage.

I can't seem to figure out how to light just one side of the stage?

That is an old standard way of wiring lighting bars. The idea is that 2 lights can be plugged into 17 and aimed at the same area and controlled by one dimmer. More outlets doesn't mean more dimmers.
