We have 10 lights. Two of the channels are not used. Can we re-program them so that we use 1-5 and 8-12 instead?

I don't think that we understand what it is you are looking for help with. Can you be a little more clear in what you need help with?
Page 13 of the manual you linked to tells how to set the DMX address.
If you set the "start" address to 8 then the dimmers will follow from that. If it is a 4 dimmer bar you will have 8, 9, 10 & 11.
You can also individually address each dimmer. That what the manual calls "single" mode.
