Hello,

i try to dive in on OSC via arduino.

But my knowledge about C isn't quite good. So scrolling through the librarys isn't helping.

Is there something like a documentation? I worked with PHP sometimes and the documentation there is wonderfull...

Arduino programs are written in C++, with an Arduino-specific library providing additional features. I recommend the following resources:
