The third page of Color contains all the individual color parameters.
Touch and drag on UV to raise/lower it.
Note:
The Color Picker will set UV to zero and show emitter levels in grey brackets, so if you want a color picker color with UV added on top, choose your color first and then add UV rather than the other way around.
