I'm playing around with my Lemur and i was wondering if it is possible to do this bidirectional.
E.g. Moving a fader on Gio, the value is shown on the ipad.
Has anybody an idea?

Yes it is possible if you use the /fader style setup instead of the /sub. You set up a bank of virtual faders on the Lemur and the console will transmit fader moves for the appropriate page of faders you are moving on the Gio.
yes its possible by using faders and listening for feedback! You can also have a look at my Lemur Layout on: https://github.com/ElectronicTheatreControlsLabs/OSCLayouts/tree/master/User-Submitted/Lemur to see how I dealt with a few more elaborate feedback parsings by usings scripts.

i´m wondering how to connect the whole thing. my problem is, i see on the layout of the Lemur what i´m doing on the console, but i can´t control the console with the iPad.
string rx is on, osc is on, ip is correct.
In case you used the lemur layout available on github, be aware that you need to set up IP Address 1, not just IP 0 in the Lemur settings. Its a bit of an odd setup I made there due to another unrelated part of the layout.
