ELO ET2201L touchscreen for my ION but it isn't being recognised.

What generation of an Ion do you have? You can tell on the back of it has one or two network connectors.
Elo changes their model numbers quite often, so that info usually doesn't help. We need to know what kind of touch technology your monitor supports...

My ion has 1 network port on the back, how can we work out which touch technology the monitor supports?

1x Network Port means your version of Ion Console does not support Windows7 Touchscreens like the one you listed above. See this support article on our website for more information : 

There may be a chance to upgrade the hardware/os on your ion if its not too old to allow for Windows 7 Touchscreens; please contact your dealer about elegibility and pricing.
