We are going to change our Cobalt and Congo Consoles in couple of years. We look at Grand MA3 and they had put some nice buttons on that controldesk. Not function, the physical button.

I don't think that ETC plans a new console, there was just a big update to v3.0. You can add additional hardware over OSC and Arduino, you find a library at https://github.com/sstaub/eOS
GrandMA3 is in the moment a NoGo for theatre people, the software is unstable and simple things like dimmer curves or simple effects are not missing. Most people running MA2 software on the MA3 console or give their consoles back.
So they have no plans to match MA3 consolles and there has been so much new in EOS 3.0 with Augment3d and so on and the old EOS is couple of years now? ;)
Unfortunately ETC will never match the GrandMA3 console, the concepts are very different. GrandMA is the best for doing Shows, but not for theatre needing.
But there are some features of GrandMA3 I miss, MIB (really cool), Phasers, Appearance, User configurable GUI, LUA macro language...
Lots of manufacturers stopped releasing products because of the pandemic. No idea what ETC is up to, but if I were in the market for anything lighting related I'd wait until at least the summer to see what new things pop up (from everyone, not just ETC) before making a choice.
