How do I Change DMX output values

Question

How can I change the output of dmx on a specific address I know you can do {Address} and use the level wheel to change it the thing is once I deselect the address it goes back to its background value how do I make it so it stays.

Ah, so that's a state you want to record afterwards which means parking will not work for that. It might also not work with the command line method Hans has described because it's a parameter with modes. 
 Just checking: you're aware that to get to the rotation you need to change the mode of the Color_Select parameter 
 I would probably did in the fixture profile. The editor can show also the different ranges for the different modes, so it should be possible to find out why you can't go to 200.

Chan X {Parameter (optional)} // YYY Enter 
 The "//" tells it that the level is a DMX value not a percentage or other user-value.
