That will depend on the lights. Most DMX gear has some setting for what it does when DMX stops. "Hold Last Look" will do what you want, if it's available.

they are mega hex pars and i want them to stay at the color i select when im done most likely white for work lights so we can clean the stage so we dont have to turn the metal halides on
