I would love to know how to disable this as I do not want this occurring at all!

The Auto Playback setting in setup is why after recording a cue it will automatically play back. And Eos behavior is that cuelists being played back have to live on a fader. Unless you map the cuelist to a fader it will automatically populate the lowest empty fader as soon as you start the playback
