What is the best system to teach new users on?

Ok, so I am the chief lighting engineer at my high school and am looking to teach some of the underclassmen how to use our Element console.  Unfortunately, our auditorium manager fell behind for a couple of years before I got here and didn't get the Windows 7 upgrade for the console, so it's running EOS 2.9.  I'm trying to figure out whether I should teach our new programmers and designers how to use the system as it is, or whether I should use my ETC nomad and Gadget II to show them the new EOS 3.1.  We are hopefully updating our console in the next couple of years to either an Element II or an Ion XE, so I don't see much point in showing them all the intricates on an outdated console when there will be a completely new (and very different) one to replace it in the somewhat near future.

Does anybody have any ideas for how I should approach this?  I'm working with our auditorium manager and our district maintenance to expedite the update of the console as fast as we can.
