How do I set up my subs to be bump buttons for busking? For instance, I want to be able to bump out colour of a group of fixtures and then restore to the active colour when I release the bump button. Same for gobo, iris etc.

The default setup of the submasters will do what you are asking. Just record a sub with the parameters at the values you want to bump "open" (parameter home for instance). And if you dont already have it mapped to a fader, just type sub # enter. then push both bump buttons together below the fader. Done. I had never done this on my ION before so I just ran out and tried it, works like a charm. Releasing bump button restores to active values.
Also, if you make a sub with say pan and tilt in an effect the bump button will apply it as long as you hold the button.
Hope it all works out for you!
