Sorry, but if there are problems with priority by channel it is a firmware 'bug' of the fixture.
There are many stupid companies which are not able to read about the basic of the DMX protocol.

The option you mention is in Patch > Protocols, not in setup. The reason why it's on by default is that it will not misbehave with products that correctly implement sACN and DMX according to the respective standards, but does allow additional control with those products that do support it.
