I have a submaster controlling multiple channels. When I run the submaster to zero all the channels go down to zero except for one which, on the live table, shows me a magenta 25. How do I figure out what is seizing that channel?

The first hint is in the color: magenta means (among other things) it receives it's value from a cue.
To find out more details either use the shortcut [About] & [Cue] so see the source, or have a look at About > Current Values.
When you change sub properties while the sub is active make sure to the bring the sub to 0 and then back up again. This will ensure that all property changes are applied.
