Why does my IonXe do this?

Hey! I think what's happening is that it's falling back to the preset that has the desk light set to 50%? Just a guess.

Maybe you have to click and hold on one of the three presets on the far left column until that new setting is recorded into that preset as a workaround?

I would like to think it would just stay at your desired setting until a preset has been recalled.

It may be falling back to a preset, but I haven't seen mine do that. Recording a new preset may fix it temporarily?
