Switch as in 0% or 100% but nothing in between? In Patch > Type search for "Generic Non Dim". You can choose between Non Dim At Full and Non Dim At 50. The difference is important if you switch your non-dims in a fading cue: of course they will always switch, but the question is when: Non Dim At Full is off during a fade-in and will only turn on at the last moment, when fading-out it will turn of right away. Non Dim At 50 will switch half-way through the transition.

Yes that's right. It's a non dimmerable dimmer on or off. 

To power all the fixtures. Which are all dmx controlled. 

 thought about throwing them on a button but thought that would probably be risky to accidentally knock out all power mid show

Is there a way to configure the ion in a way to switch dimmers on as the desk turns on, and in reverse to turn dimmers off when console is turned off?

If you have your power circuits patched as NonDims, you can write two macros to Park the Channels at Full and unpark them when you startup/Turn off the Desk. This is the standard procedure on bigger stages as well. You can add these macros as startup/shutdown macros in system settings.

The downside to this is that you can't easily turn the power circuits off while the console is on, and there is no indication (like the "Parked Channels" that appears when you park a channel) to let you know the status of the power channels.
