Color Picker Causing Different Values in LEDs with same Bulb types

Hello, the school I work at has recently bought an ETC Nomad and command wing. As the technician with the most LX experience, I have been tasked with setting it up for use in future: patching, creating groups/palettes, making magic sheets etc. However, I actually have limited history using EOS and aside from doing the 2-day training course, I have only ever used EOS for venues or gigs where the desk and patch are set up and maintained by other technicians.

Everything has been going well so far, and this forum has helped when I come across issues I don't know how to sort. However, I have found something strange is happening with our LED fixtures when using the color picker. All our fixtures are Chauvet, as the head tech wanted to ensure they all used the same colour system and would create and even colour when mixing. This has never been an issue when mixing on our previous desk, and we could ensure our wash, cyc and movers were all the same shade.

However, when I was creating Color Palettes that required mixing (such as purple/orange/yellow), our fixtures would create different colours and show different sets of parameters, despite the fact that I was clicking on only one point on the color picker. Moreover, Our Chauvet Mavericks, which are RGBW, would look similar in colour to our CYC wash (RGBAL), but our F-915FC and F-415FC wash lights which are also RGBAL would appear more washed out and paler in saturation.

For example, I have put my cyc lights and front wash on at full and selected a teal shade I liked the look of. I was then provided these values:

We currently have a star cloth hung which doesn't reflect the cyc lights as they usually would be, however that is a noticle and distinct difference in shades of blue. I then have manually changed the values of the cyc lights to match the wash and it now looks uniformed:

TLDR, is this a patching issue? A fixture set up issue? Do I need to update EOS or is this just life and I have to accept this issue? None of the pre-programmed colours on EOS work either and instead often are just a shade of white so is this a symptom of a wider issue that I have caused and not realised? Again, our previous desk (Zero88 FLXs) has never had this issue and even when we used other software like LightKey, this disparity has never happened either.
