Having a very difficult time finding @ in offline editor. Doesn't matter if I actually select the @ key, pick A or the * all say address on the command line and when I hit enter it asks to confirm. When I do the entire channel string is highlighted in yellow however nothing changes and the fixture stays in Type. If i exit patch and go back in the fixture is still in Type at that channel.

When you hit enter (the second time for delete actions) you should see the "blot" mark appear at the end of the command line. That means it really did it. The type can stay, but without an address it won't do anything.
Yup I have the cheat sheet and it says to use A # or * but all three give it "channel" on the command line so I don't have @ for some reason.
Removing the fixture Type is exactly what I want to do. Is it not possible?
When you're in patch, the command line does a translation of sorts so that @ becomes "address" or channel.
I believe what you're trying to do is change the type from a fixture to a plain dimmer. Dimmers are actually a (basic) type of fixture. When you hit the type key, "dimmer" should be one of your options in the show. If not, look under the "generic" manufacturer.
Also, if you're getting "channel" instead of address, you're probably looking at the patch ordered by channel. I don't remember for sure, but you may only be able to change the type in channel view. Press [Format] to get there.

I have found that is is easiest to capture a separate unused/unpatched channel and copy it to the one you are trying to remove the fixture from, since deleting clears out all fields in patch (device discovery, channel number, etc.) which you may want to keep at default. So using the offline, in patch channel to address format, the syntax would be:
[(unused channel number)] [Shift P] [(channel number you want to remove the fixture from)] [enter] [enter]
