I have standard incandescent 3-cell cyc fixtures with RGB gels; the addresses are sequential but not for RGB, they end up being GBR.
Can I create new fixture profile with the colors in GBR order and still use the color picker?

Yes. I just tried this with the offline editor:
Copy the LED RGB fixture then edit the DMX patch to 3,1,2 instead of the default 1,2,3, then patch as usual. The DMX address assignments map correctly.
- wouldn't it be nice to have a RGB(W) fixture where you could patch in dimmers that was not in sequence at all? maybe as parts..? the colorpicker is a neat tool . ( - and let eos calibrate it with your actual gels..! - cool?)

Maybe, but it is pretty easy to get sequential addresses either by swapping plugs or swapping gel.
- normally, maybe. But not in my house. I would have to re-address out of physical order or re-wire nearly 700 dimmers.... that will not happend. ;-)
Wow. 700 dimmers for just the cyclorama!!! Clearly we live in different worlds. Still, if it's Sensor dimming it could be cleaned up with patching in the dimmer rack.
I'm not entirley sure this will work in real life, but...
Create 3 new fixures types. Red / Green / Blue. Each one contains all three RGB attributes so that it auto adds the HSI attributes. In the Red fixture, set the Green and Blue DMX to 0. In the Green fixture, set Blue and Red to DMX 0. Blue - Green and Red at DMX 0.
Patch the three new fixtures as 3 parts on the control channel. Because the fixtures contain the HSI values, it enables the color picker. When patching, since each fixture only has 1 DMX item, it only takes up 1 address. This way you can patch any dimmer regardless of order.
When testing by clicking the color picker and looking at the about screen of the channel, outputs look like the correct values.

no, - not all 700 dimmers for the cyc, but it's a little bit here and a little bit there, and they are not always used for the same cyc at the same position, they can also be side-lights or light-walls or anything in the scenery. I know I can patch in the sensor dimmers, but running with upto 4 different shows in the rig at all times, I want the outlets to keep the same channel number all day thru. And the dimmers to be in their physical order. - I'm old an easy confused. The last thing I need, is more than one soft-patch to keep track of... ;-)
