Am I correct in thinking that the Hog 3 was not capable of outputting sACN, even via a DP8000, but the Full Boar 3 was, either directly out of the back or through a DP8000?

Yes. The Hog4 full console has 16 Universes via sACN or Art-net and you can output 8 of those on the physical DMX Outputs.
