When I was getting out of the Navy and starting in a lighting program in 4 months in 1991, I found Designing with Light by J. Michael Gillette to be very good as a starting point. I was an electronic tech and planned to focus on tech at school.

Light Fantastic - The Art and Design of Stage Lighting by Max Keller (it is a lighting design book but explains alot of the lighting fixtures and tools out there very well.)

Most of the books out there, don't really address LED Technology that much since its come about in the past few years very quickly, so I recommend reading about LEDs are made and how they work and how they shouldn't be used on a dimmer, rather on a driver designed for them. There are books out there about LED, but I think googling topics like "LED" and "LED Dimming" will get alot of good information that they should read about and become knowledgeable on.

Maybe someone here knows about Stage Lighting books that contain information about LED + LED Dimming?

I would second the Richard Cadena books, they served me well early on!  I am not sure if there is an updated edition of his Automated Lighting book, but that one was also great!  Though, the edition I have mostly revolves around moving light technologies that are a bit outdated at this point - in the "before-times" prior to LED becoming a dominant force in lamp technology.
