Hi there,
we have a new video projector, an Optoma ZU850.
It is controlable via Crestron, Extron, AMX and PJLink.
Is it possible to blank the video with an ETC Element via RJ45 - or any other options?
Thanks for all suggestions in advance.

Your console can't output any of those protocols directly. You would need some intermediary device (like a PC or perhaps an Arduino device) to translate from the OSC that the console can output to a serial command that the projector understands.
For example, if you had a computer running Qlab, you could follow the instructions here: http://www.chrisgrote.com/2015/01/qlab-serial-projector-control-with.html
I imagine that whatever media server you are using to feed content to the projector is better suited to control the shutter than your Element is. I would start there and try to trigger that feature on the the media server from the Element.
