You could also set the subs to be independent which means they will override the level of the cue and doing it this way it's easier to record sequential cues as you're always in the right place already.

Having just tried this on the OLE, when recording the cue, the fader still does control the channels but it wont go below the recorded value in the cue?

Hmm, that's the point of independent, it's values will override any non-independent source, so unless your cue list is also set to be independent that should work.

The sub with channels 1-6 which is set to independent. I bring the sub to say 50% record the cue, the cue grabs the level so even the sub is at zero, the cue keeps the value at 50% but the sub can take the level higher which is expected.
