Technically speaking, no files are ever altered.
You just save a new file every time with the same name, except for an updated time-stamp in the name.
Unfortunately it isn't difficult to delete files so keep any you really don't want to lose on a USB stick, and better yet, backed up elsewhere.
Always a good idea to keep backups, but I find that deleting a file actually takes a lot of deliberate actions (exiting to the shell, opening the file manager, deleting the file). It's not something that you will do by mistake from within the EOS software.

No, all you have to do is click on the file in the CIA (in 'Open' or 'Save' files), hit [Delete} and then [Enter} and its gone, no?
Well, I learned something new today - you are correct that you can delete the file in the file browser.
That seems like a step backwards in file handling- it shouldn't be that easy to delete a file from within EOS.
To be fair, you didn't know how to do it. Sounds fairly secure to me. :Þ
On Locking;
There is not a password function, though I hear it's on the mythical list for development. So far the facepanel lock is the only security.
I find the best security is key lock on the door to the booth. Not everyone has a door, or a booth for that matter, but those choices generate consequences.
I keep a house file as well. I have occasionally found that it was recorded over by another operator during the show. in that case I just reloaded the show file previous.
I also keep a folder ("head lx files - do not touch") with clean copies of the house file as a backup, AND a USB with maybe slightly out of date copies of the house file.
but to answer your question, NO, a template or Locked file isn't possible at this time.
Great solution, i don't think my colleague would be very happy when he finds out i locked him out of the booth XD

You can make one file your template file.
There is currently no way to password protect your Gio. You can vote on those feature requests:
