The easiest is to select the channel and hit enter, hit the [Rem Dim] button and hit enter again. That should black out everything except the channel(s) selected.
To restore the look you had before doing this, hit the [Rem Dim] button again before you hit anything else.
You can use the encoders to pan and tilt while in Rem Dim.
Note: Highlight as ueliriegg mentions above lets you do more and is more configurable.
